The winery has been designed to take the utmost care of the exceptional characters of the grapes produced in the property, the unique that have the privilege to enter.
It has three levels in order to take advantage in the most efficient way of the best tool of the winery: THE GRAVITY. Gravity is the best method to handle the grapes and wine of all the ones that man for now can arrange.
The level + 1 is situated on the mouths of the stainless steel deposits and in which the table of selection and the destemmer-crusher is situated by the ones that all the grapes upon entering the winery pass. In this way the grape harvested by hand in containers of 300kg and in boxes of 20kg, is selected and put in deposit directly without being harmed by hoppers or pumbs.
In the level 0 they are situated the stainless steel tanks of fermentation, of troncocónical form for a greater extraction during the fermentation, gifted of cooling system and 15000 l of capacity, and the zone of work of the winery, with a press vertical hydraulics and the mouths of the deposits of subterranean concrete, and also a special subterranean place for the aging of the wines in oak barrels.
In the level -1 to have built some subterranean deposits of concrete vitrified with epoxi resin so that the emptied of the deposits, bleed, “delestages” and pressed they be carried out also by gravity, besides obtaining in them a perfect conservation of the wine during the remainder of the year without changes of temperature by being completely remote low land.
