This is the fundamental section of the business, in which our reason to be resides.
Ullate’s winery cultivates its own 12 hectares of fields in Monteagudo. Those are privileged soils, receiving the influence of the mount Moncayo (Iberian System) and of the river Queiles, which furnish a very extreme climatology, with very cold winters and hot summers with very little rain, very beneficial for the cultivation of the vine. These circumstances permit to obtain these grapes of the highest quality.
When in 1995 the idea is born in the bosom of Ullate Muñoz family of elaborating and commercializing their own wines from their vineyards, as their grandfathers did old, and obtaining the aim to produce original wines, of high range and excellent quality, they see clearly the way to continuing, that is divided in two basic props:
To carry out an as complete as possible formation on the subjet of viticulture and enology, uniting the knowledge acquired to the inherited from their ancestors.
And especially to adapt the vineyards to obtain the maximum possible quality in their fruits, departing from this premise to obtain the maximum possible quality in their wines. For this, first they transform all the vineyards in espalier for a better aeration of the bunchs and to escape of the effects of the late frosts and their harmful consequences for the quality of the grapes.
